AIP & Paleo Nachos

An easy, fun recipe for AIP and Paleo friendly nachos! This meal is great for a quick week night meal or for a party over the weekend. The recipe is flexible so you can adapt it to your preferences!

    AIP & Paleo Nachos

    For the nachos, you'll need:


    I love plantains as the base for this meal. You can find my recipe for tostones here. You could also use Siete Tortilla chips if those work for you. 

    Shredded beef

    I opted to use shredded chuck roast for protein. You can find my recipe here. I also love to pair this with leftover chicken-whatever you have on hand!


    Shredded red cabbage, diced red onion, spinach, microgreens, extra cilantro. 


    • 2 medium ripe avocados
    • 2 tbsp diced onion
    • Juice of half a small lemon 
    • 2 handfuls of fresh cilantro, chopped
    • 1/2 tsp sea salt
    • 1/2 tsp garlic powder
    • Black pepper to taste (*omit for AIP)
    • 1/2 tsp cumin (*omit for AIP)

    Combine all ingredients in a bowl using a fork to smash the avocado. Serve on top of nachos!
