I was super late to the sweet potato toast craze, but now I understand. It's amazing. It's perfect if you're following a Paleo style diet or if you just want to try something new!
Find yourself a sweet potato that's going to have a large surface area when you slice it. Alternatively if you want to make a bunch of little round toasts (super cute) you can go for a more conventionally shaped sweet potato.
I don't have a toaster at home that isn't a gluten toaster, so I opt to make my toast in the oven.
The best part is adding the toppings! I didn't realize how much I missed toast until I tried this. It's definitely not the same as bread, but it's soo good! My favorite toppings are coconut yogurt, smashed avocado, and sunbutter (an AIP reintro, but coconut butter is also amazing!)

- Coconut oil
- Sea salt
